Mussels, a paradigm or an archetype of a super blue food

The mussel is a blue foodstuff which does not require a supply of fresh water, pre-prepared food or antibiotics, its cultivation leaves only very faint traces of carbon, has some very special nutritional characteristics.
With Labarta we will learn about the countless benefits of mussels, as an excellent source of high-quality protein and a sustainable food, because mussel populations play a major role in the management of coastline water quality. By means of their filter feeding process, the bivalves mitigate eutrophisation and make water clearer. It has been estimated that cultivated mussels eliminate 49,000 tonnes of nitrogen and 6,000 tonnes of phosphorus from oceans worldwide.
